
As you probably know by know {or are soon to discover if you’re new to my blog, welcome 🙂 }, I love my slow cooker. I really really love it lol And this recipe is a perfect example of another reason why I love it.
Quick prep time. Delicious ingredients. Healthy. Hearty. And able to be cooked on Low for 8 hours while I was at work. I prepped it last night, left it in the fridge, pulled it out this morning, turned it on and went to work. Came home and there she was, just cooking away merrily, no big deal. Love it!

The thing that I loved specifically about this recipe, is that it tasted different. It took the same old vegetables and seasonings that I have eaten all my life, and mixed them together in a fabulous new way. And I love that. I love new takes on old faveourites and this recipe nailed it for me.
