Ok so admittedly, Beef Stew is not one of the most photogenic foods that I’ve ever made; but it is one of the tastiest.
I love stew. I have always loved stew, especially my mom’s homemade beef stew, and I could never get enough of it growing up.
I love the thick gravy, the chunks of soft potatoes and carrots, and the tender chunks of beef, of which there was never enough and I would often fish out more than my fair share of. But the beef really was the best part.
This particular stew recipe is not my mom’s however. It’s one that I found, of course, on Pinterest. I followed the recipe mostly, just substituting tomato sauce in place of tomato paste, which I thought I had but apparently didn’t and found out at the last minute.
As I’ve said, I love a thick gravy, I think that’s what makes a stew stew-ish, so I made mine nice and thick. The recipe did however, include directions to make your stew more brothy/soupy if that’s your jam.
I also included the optional sweet potato and really enjoyed it. My soup pot was quite full when all ingredients were added, and while it did cook down a bit, we still had a decent amount of leftovers which is fabulous as stew is excellent as a leftover. Granted, there are only two of us, so how much you will have for leftovers will depend on how many people are eating and portion size.
