Made this delicious crockpot soup while I was at work today. I prepped it last night and took it out this morning. For once, I had all of the ingredients on hand.
I didn’t do any substitutions to the recipe, but I did adjust how I cooked it. Because the soup has quinoa, and quinoa absorbs a lot of liquid, I chose to leave it out while the rest of the soup cooked. So I cooked my soup on low for 8 hours while I was at work, and having coffee with a friend post work.
Once I got home, I shredded the chicken, added the quinoa to the crockpot, and put the shredded chicken on top of the quinoa to make sure that most of it was covered with liquid to cook. I then turned the crockpot onto high heat from warm, and set a timer for an hour just to cook the quinoa. After an hour, I checked the quinoa. It wasn’t all fully cooked, so I left it for another hour.
After the second hour was finished, and the quinoa was cooked to my liking, I turned off my crockpot and unplugged it. My boyfriend and I were playing Risk so I just left the soup in the crockpot. After the game, I had a bowl full and it was delicious.
This is a very hearty soup, and because the quinoa was cooked afterwards, the soup was able to remain broth-y, which is how I like my soups. If you want less broth, you can of course, put your quinoa in earlier and leave it longer like the recipe says. Overall, a nice, fairly easy to throw together crockpot soup.
