I like Risotto because it’s super easy to cook but fancy. Now, this Risotto doesn’t look like the Risotto from the Pinterest recipe, but that’s because I mixed in the spinach and the scallops rather than using them as a topping.
So I grocery shop at Walmart and I got a bag of frozen spinach, which, if you’ve never bought it before, it comes in little cubes and when it thaws/cooks it looks very…. disintegrated. Which is why my Risotto turned green.
Thr other main difference between what I made and the Pinterest recipe, is that they used jumbo scallops and I just had little baby ones. I also didn’t top off the Risotto with the brown butter drizzle. By this point, it was quite late and I was just hungry lol
I should mention, if you’re cutting back on sodium in your food, be aware of the type of chicken broth that you use. As I’ve mentioned in a previous post, I use Better Than Boullion and I can sometimes find it to make my foods quite salty. Just keep that in mind.
The Risotto was amazingly delicious and I loved it sooo much. Will definitely make this recipe again. And who knows, maybe I will do all of the steps and use spinach and scallops as a topping. 😁
