BBQ Chicken Thighs and Steamed Veggies

Sometimes simple is the best way to go. Tonight I didn’t cook anything overly fancy. When I got up this morning, my chicken thighs were still frozen and I was too tired to prep my crockpot before work.

So when I got home, I had the boyfriend prepare some mini potatoes and green beans to steam. I heated up our toaster oven, and cooked my mostly thawed chicken thighs for 60 minutes at 375. I just covered them with BBQ sauce before baking. Once the vegetables were done, I seasoned them with butter, salt and pepper.

And that’s that in a nutshell. A simple tasty dinner, no fuss no muss.
