
Tonight I was feeling in a “soupy” mood, so I looked for an easy recipe to whip up. I wanted something simple, hearty and filling.
I had all of the ingredients on hand, so no substitutions were made. The directions were straightforward and easy to follow and there weren’t very many of them.

I let the soup sit for a bit after cooking, before I used my immersion blender to blend it. This helped to make my soup thick and creamy.

At the end, after blending, I decided to stir the cooked bacon into the soup rather than using it as a topper. I had a delightful surprise from the bacon, as it turned out it was maple flavor so that was interesting.
