This recipe was soooo delicious! Very messy to eat though but so fun! Last summer I scoured Pinterest looking for summer recipes that I could make in my crockpot as we have next to no air conditioning in our apartment to run my oven. This is one of the recipes that caught my eye.
It takes a few different ingredients but it is fairly simple to make. I’m not sure that I used the right lettuce for the wraps as it wasn’t very easy to fold them into a wrap, I just had my boyfriend pick up a leafy head and this is what he brought home.
The chicken mixture cooks on High for 3 hours, then you shred the chicken and let it sit in the juices for 10 minutes.
The mango salsa was super easy to make. I thought it would be more involved but it wasn’t so that was nice. I couldn’t get ahold of 3 mangoes, so I bought 2. One started to go bad so I salvaged what I could, so I used like 1 and a quarter mangoes?? And then I dropped most of the mango on the floor trying to put the diced pieces in a bowl and here we are, just a small bowl of mango salsa.
Assembly is fairly straight forward: I started with a washed leaf of lettuce, topped with the chicken mixture (make sure to scoop it out with a slotted spoon so it’s not too liquidy), top with the mango salsa and a couple of slices of avocado.
The flavours were incredible! The cilantro, the avocado, the chicken with spices. Sooo incredibly delicious. I will definitely be making this recipe again.
