Butternut Squash Quinoa Casserole

Not the most appetizing picture, but tastes delicious!

This Butternut Squash Quinoa Casserole is fairly simple to make and delcious. I didn’t make any adjustments to the recipe other than to use ground Sage instead of fresh as I didn’t have any fresh Sage on hand and I used Mozzarella cheese instead of Gruyure for the same reason. The recipe gave an option of vegetable or chicken broth and I went with vegetable.

To make working with the squash easier, ie. cutting and peeling, I find that poking some holes in it with a fork and microwaving it for about 3 minutes and then letting it cool enough to touch works great.

While there are quite a few steps to making this recipe, they’re easy to follow. It took probably about an hour start to finish to make this tasty and filling casserole.
