
Tonight we had these delicious and easy to bake pork ribs for dinner. I started by mixing together the spices for the dry rub. Then I baked the ribs in the oven for 2.5 hours at 325.

The next step was mixing up the honey and BBQ and broiling the ribs.


While my ribs were baking, I also made a garden salad and baked potatoes.
For my salad I just kept it simple with lettuce, a bell pepper, celery, carrots and an avocado. I also added dried cranberries, peacan halves, slivered almonds, sunflower seeds and feta cheese for a little extra fun.

The baked potatoes are super simple as well. I chose two nice Russet potatoes, washed them and poked holes all over with a fork. I then melted some butter in the microwave, sprinkled in some seasoning salt and then rolled the potatoes in the butter. I placed them on a microwaveable plate and microwave cooked them for 10 minutes. If you’re doing this yourself and haven’t made microwaved baked potatoes before; the cooking time may vary depending on your microwave and the type of potato that you choose to use.

Be careful removing your potatoes and plate from the microwave as they will be quite hot. Carefully cut into your baked potato (there will be a ton of steam), and then add your favourite baked potato toppings. Mine are butter, salt and pepper, but you can also add: sour cream, grated cheddar cheese, bacon bits or chives.
