This soup is soooo delicious! I loved it so much. It was very simple to make, and so hearty. My substitution was chickpeas in place of the white beans, and it worked out fine.
I didn’t have any precooked chicken on hand, so I cooked a couple chicken breasts, only they weren’t chicken breasts, they were chicken breast portions, which if you’re in a hurry at the grocery store, look like chicken breasts until you get them home and see that they are a lot thinner than your average chicken breast. So I just baked them on a baking sheet and prepped the rest of my ingredients while I waited for them to cook. Unfortunately, I wasn’t really thinking about them being thinner and cooked them for too long, so they were a bit dry when I finished them, but the liquid of the soup helped with that.
I only seasoned them with the seasons being used in the soup, salt, pepper and Italian seasoning. Then on to my soup itself.
All in all, this simple, creamy and filling soup was simple enough to make and is one I will probably remake in the future as well.
